Single compartment compact roll-in retarder-proofer BFM
is designed for use in artisan bakeries for controlled leavening
of various types of pastries, confectionery, pizza, etc.
It is equipped with a cooling unit that keeps the dough stored for up to 72 hours. Then, according to the settings previously entered, the temperature rises and the leavening process begins.
